Baked Bean Veggie Balls

Description

Golden-brown balls packed with baked beans, mixed vegetables, and a blend of spices. Crispy on the outside, soft and flavourful on the inside, they make a perfect snack, appetizer, or side dish.

Ingredients

  • 300g Kendel Baked Beans in Tomato Sauce, drained, lightly crushed
  • 2 cups cooked, mashed potatoes
  • 80g (2/3 cup) mozzarella or cheddar cheese, grated
  • 75g (1 ½ cups) plain panko breadcrumbs
  • ½ cup Kendel All Purpose Flour
  • 1 egg, whisked
  • 1 onion, finely chopped
  • 2 stalks escallion, finely chopped
  • ¼ teaspoon salt
  • 1 teaspoon Kendel Hot Pepper Sauce
  • Kendel Spicy Sweet Ginger Sauce

Instructions

  1. Line a baking sheet with greaseproof paper and set aside.
  2. In a mixing bowl, combine baked beans, mashed potato, cheese, and flour. Season with salt, onion, escallion, and hot pepper sauce. Mix thoroughly until well combined.
  3. Scoop about 2 tablespoons of the mixture and roll into a ball. Place on the prepared baking sheet.
Repeat to make approximately 12 balls.
  4. Set up a breading station with beaten egg in a shallow bowl and breadcrumbs on a plate. Dip each ball into the egg, letting the excess drip off. Roll in breadcrumbs, pressing gently to coat evenly. Return to the baking sheet.
  5. Heat oil in a large frying pan over high heat. Carefully add half of the veggie balls and fry for 3–4 minutes, or until golden brown. Remove with a slotted spoon and drain on a plate lined with absorbent paper. Repeat with the remaining balls.
  6. Arrange the baked bean veggie balls on a serving platter. Serve warm with Kendel Spicy Sweet Ginger Sauce.
