Cilantro Rice

Description

Light, fragrant rice tossed with fresh cilantro for a bright, refreshing side dish that elevates any meal.

Ingredients

  • 1 ¼ cups Kendel Jasmine White Rice
  • 2 tablespoons Kendel Olive Oil
  • 1 clove garlic, minced
  • 1 teaspoon butter or margarine
  • 2 ¼ cups water
  • 1 teaspoon salt
  • 3 tablespoons lime juice (juice of 1 lime)
  • 1 cup lightly packed cilantro, chopped

Instructions

  1. Heat olive oil in a medium saucepan over medium-high heat. Add the raw rice and stir to coat. Continue stirring occasionally until the rice begins to brown slightly.
  2. Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Add water, butter, and salt. Bring to a rolling boil, cover and reduce the heat to maintain a low simmer.
  4. Let the rice cook undisturbed for 15 minutes. Remove from heat and allow it to sit, covered, for 10 minutes.
  5.  Fluff the rice with a fork, transfer to a serving bowl, pour lime juice over the rice, and toss with chopped cilantro.
  6. Perfect as a side dish with curries, grilled meats, or vegetarian mains.
