Kendel Butter Bean & Tomato Salad

Description


A refreshing salad of tender butter beans and ripe tomatoes, tossed with a light seasoning. Crisp, healthy, and perfect as a side or light lunch.

Ingredients

 

  • ¼ lb plummy tomatoes, diced
  • 1-400g can Kendel Butter Beans, rinsed, drained
  • 2 teaspoons finely chopped fresh oregano leaves
  • 1 teaspoon onion, finely chopped 
  • 4 lettuce, leaves, washed, dried and shredded
  • 2 tablespoons Kendel Spicy, Sweet Garlic Sauce 
  • Salad dressing of choice (optional)
  • Lemon wedges, to serve

Instructions

  1. In a bowl, combine tomatoes, butter beans, onion, oregano, lettuce and spicy garlic sauce. Drizzle with dressing, season with salt and pepper, and toss gently.
  2. Refrigerate and serve with desired protein.
