Kendel Lychee Chicken

Description

Sweet meets savoury in this vibrant dish where tender chicken is simmered with juicy lychees and aromatic seasonings for a refreshing, tropical twist.

Ingredients

  • 1½ lbs chicken thighs cut into bite sized pieces
  • 2 tablespoons Soy Sauce
  • 1 tablespoon salt
  • 1 teaspoon Kendel Olive Oil
  • 1 teaspoon sugar
  • 4 tablespoons corn starch to coat chicken
  • 2 cups + 1 tablespoon Kendel Vegetable Oil
  • 1 teaspoon garlic, finely, chopped
  • 1 teaspoon crushed ginger
  • 1 can Kendel Lychee, drained – syrup reserved
  • 1 teaspoon red chili flakes
  • Scallion tops chopped for garnish

Sauce:

  • 1 cup of the reserved Lychee syrup
  • 2 tablespoons tomato sauce
  • 1 tablespoon corn starch mixed with 1 tablespoon water

Instructions

  1. Rinse chicken pieces with vinegar, drain thoroughly, and set aside.
  2. In a bowl, marinate the chicken with soy sauce, salt, vegetable oil, and sugar. Let sit for 30 minutes.
  3. Remove chicken from marinade and coat evenly in cornstarch.
  4. In a deep frying pan, heat oil to 350°F. Fry chicken pieces until golden brown and crisp. Remove and set aside.
  5. In a separate pan, heat 1 tablespoon Kendel Vegetable Oil over medium heat. Sauté garlic and ginger for 1–2 minutes until fragrant.
  6. Add sauce ingredients and cook until the mixture thickens slightly.
  7. Stir in the fried chicken, lychees, and chili flakes. Toss gently to coat and allow flavors to blend. Simmer for 3–5 minutes.
  8. Garnish with chopped scallion tops and serve hot.
