Kendel Tuna & Corn Fritters

Description

Crispy, airy fritters made with Kendel tuna, sweet corn, and savoury herbs. A delightful snack or appetizer bursting with flavour.

Ingredients

  • 1 teaspoon salt
  • 2 ¼ cups Kendel canned coconut milk
  • 1 cup Kendel Sweet Corn
  • 3 cans Kendel Tuna Chunks in Oil, drained
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 stalks scallion, finely chopped
  • 1 medium onion, finely chopped
  • 1 small, sweet pepper, finely chopped
  • 1 sprig thyme leaves, chopped
  • 1 teaspoon Hot pepper, chopped
  • 3 cups Kendel Vegetable Oil

Instructions

  1. In a large bowl, whisk together the flour, and seasonings.
  2. Add the tuna and corn, mixing gently to distribute evenly.
  3. Gradually add coconut milk until a smooth batter forms.
  4. Heat vegetable oil in a large non-stick frying pan over medium high heat 
  5. Drop batter by ¼ cup portions into the hot oil and fry until golden and crispy on both sides. (Reduce flame if oil becomes too hot)
  6. Remove from pan and drain on paper towels and serve warm.
