Tomato Chilli & Mackerel Pizza

Description

A flavourful pizza topped with spicy tomato sauce, tender mackerel, and melted cheese for a bold, satisfying bite.

Ingredients

  • 60ml (1/4 cup) Kendel Extra Virgin Olive Oil
  • 3 large red onions, halved, thinly sliced
  • 1⁄4 cup fresh oregano leaves, chopped
  • 2 garlic cloves, crushed
  • 2 fresh pizza bases or pita bread
  • 100g (1 cup) Mozzarella cheese, coarsely grated 
  • 250g (1/2 lb )mixed grape tomatoes, halved
  • 1-425g (15oz) can  Kendel Jack Mackerel drained, flaked
  • 100g  (1oz) Stuffed (pimiento) Ybarra Olives {Optional)
  • 1-2 long fresh red chilli peppers, thinly sliced {Optional}
  • 1 large sweet pepper, thinly sliced
  • Lemon wedges

Instructions

  1. Preheat oven to 375F. Heat 1 tablespoon of oil in a large non-stick frying pan over medium heat. Add onion, season with salt and pepper, and cook, stirring occasionally, for 15 minutes, or until caramelised.
  2. In a small bowl, mix oregano, garlic, and the remaining oil. Place pizza bases on 2 large baking trays. Spread each base evenly with the oregano mixture.
  3. Top the pizza bases with the caramelised onion, mozzarella cheese, tomato, mackerel, olives, sweet peppers,  chilli peppers. Bake for 20 minutes, or until the crust is golden  brown and the cheese is melted and bubbly.
  4. Serve with lemon wedges.
