Cheesy Bean & Potato Bake

Description

Tender beans and potatoes baked together with melted cheese for a warm, comforting dish. Hearty, flavourful, and perfect as a main or side.

Ingredients

  • 450g (1lb) Irish potatoes, peeled, quartered
  • 1 teaspoon salt
  • 1/2 cup Kendel Coconut Milk, warmed
  • 1oz butter
  • 2 tablespoons onion, finely chopped
  • 2 tablespoons sweet pepper, finely chopped
  • 3/4 cup Tastee Cheese, grated
  • 1 -1/2 x 400g cans Kendel Baked Beans in Tomato Sauce
  • 1 teaspoon paprika

Instructions

  1. Preheat oven to 375⁰F. Place potatoes in a medium saucepan and cover with cold water. Add salt and bring to a boil over high heat. Boil for 15 minutes, or until tender. Drain and return potatoes to the pan. Cook over low heat for 30 seconds to dry them out slightly.
  2. Remove from heat and coarsely mash using a potato masher. Combine butter with warmed milk, add to potato and mash until smooth. Stir in ½ cup of cheese until melted and smooth.
  3. Season with salt and pepper to taste.
  4. Place baked beans in a 5-cup capacity baking/pryex dish. Spread the mashed potato evenly over the beans. Sprinkle with the remaining cheese and paprika
  5. Bake for 20–25 minutes, or until golden brown
