Mackerel Stamp & Go

Description

Crispy on the outside, soft and savoury on the inside, these classic fritters blends jack mackerel with herbs and spices for the perfect grab-and-go snack.

Ingredients

  • 1 425g Kendel Jack Mackerel
  • 3 cups Kendel All Purpose / Counter Flour
  • 1/2 teaspoon salt
  • teaspoon black pepper
  • 1 teaspoon Kendel Scotch Bonnet Pepper sauce
  • 1 medium onion, chopped
  • 1 stalk scallion, finely chopped
  • ¼ cup sweet pepper, finely chopped
  • 1 medium tomato, finely chopped
  • 1 ½ cups water
  • 1½ cups Kendel Vegetable Oil

Instructions

  1. Drain mackerel, reserving the sauce. Flake mackerel with a fork and set aside.
  2. In a mixing bowl, combine flour, black pepper, hot pepper sauce, onion, escallion, sweet pepper, and tomato.
  3.  Add the flaked mackerel, reserved sauce, and water. Stir until well incorporated and a thick batter forms.
  4.  Heat oil in a large frying pan over medium-high heat. Drop spoonfuls of the batter into the pan, spacing them slightly apart.
  5.  Fry for 5–7 minutes on each side, or until fritters are golden brown and crisp.
  6.  Remove from heat and drain on absorbent paper to remove excess oil.
